Wow! That's a big renovation. What's the new version going to be like? Your parents' place was already gorgeous, but I guess after nearly 20 years they want a change.
My parents just had their kitchen redone too. It was a smaller reno--new floor laid over the old one, no walls knocked out/built, no change in fridge/stove, but all new cupboards, built-in dishwasher, and flooring. It looks great, though, and it actually only took 3 days like the guys said! My parents were in shock at that. They just need to rip off what's left of the old wallpaper and put on a new coat of paint.
After that, they're going to buy a couple of bookcases for the breakfast nook. You might remember that Julie and I always had desks there--now that we've moved out, those desks are gone, and my parents have put cupboards partway into the breakfast nook and will put bookcases in the rest (at least 2 IKEA Billy ones). I'm hoping they'll be able to fit a comfy chair and side table in there too--that'd make it an awesome little reading nook. My parents, sister, and I are all book magnets--there are at least 12 bookcases in that house already, plus I have a full 6-foot bookcase in my apartment, but we all need more. It's kind of crazy.
Basically: large gold/cream/tan tile over all that space. Kitchen in more or less the same configuration, but with light wood cupboards with brass handles; countertop dark speckled Corian. Backsplash in gold, tan and cream. All new appliances. Probably we'll do painting too, after all the work is done.
Dining room and hall are probably otherwise being left alone.
Washroom's also getting a tile backsplash, and an entirely new vanity, and probably a new mirror...
Basically, nearly-Compleat first floor renovations.
...Pat and I, even after sorting out 6 boxes to give to the library/charity/yard sale, have 3 six-foot long bookshelves filled, with one of those filled 3 deep. Plus I have an army's worth of books by my bed.

Pat and I came up at noon one day (he was sick so we went into work late), when they were tearing up tile, and it looked like a bomb had gone off.
